One of my favorite things to eat for lunch is Hungry Girl's Extreme Mega-Supreme Pizza Pocket. As you probably know by now, I love the Hungry Girl recipes! They have been a great way for me to eat yummy foods while cutting back on fat and calories.

Since so many of you have asked me questions/shown interest in the Hungry Girl recipes, I thought I'd share this one that uses turkey pepperoni...a good way to use that coupon for $ .55 Off 2 Hormel pepperoni products!

Extreme Mega-Supreme Pizza Pocket
196 calories, 6 grams fat, 19 grams protein

1 Large Low Carb/High Fiber Tortilla
1 Wedge Laughing Cow Light Original Swiss Cheese
3 Tbsp. Shredded Fat-Free Cheese
1/4 Cup Canned Tomato Sauce with Italian Seasonings
4 Slices Turkey Pepperoni, chopped
2 Tbsp. Chopped Green Bell Pepper
2 Tbsp. Chopped Onion
2 Tbsp. Chopped Mushrooms

Preheat oven to 350 degrees.
Warm tortilla in the microwave for 10 seconds. Lay tortilla flat and spread cheese wedge down the center.
In a medium bowl, combine all of the veggies with the tomato sauce until well mixed. Place this mixture on top of the spread cheese wedge in the center of the tortilla.
Sprinkle pepperoni on top of the veggie mixture. Top with the shredded cheese.
Wrap tortilla up by folding in the sides first, and then rolling it up tightly from the bottom.
Spray a baking sheet lightly with nonstick spray. Place your wrap on the sheet, seam side down. Bake in the oven for 10 to 15 minutes, or until tortilla is slightly browned.
