Off to Chicago...

My wonderful husband had me on a "scavenger hunt" of sorts for clues to my birthday present all day today....and the surprise is: we're going to Chicago for the weekend!!

I've turned mine into sepia on my computer and then uploaded them....I love sepia and B&W photos!!

Family Life's Weekend to Remember Conference

Rob and I had the chance to go to a Family Life Weekend to Remember Marriage Conference two years ago, and I must say that they are INCREDIBLE!!

More Arby's Coupons

Arby's has been giving us a lot of free food lately...here are a few more coupons for free sandwiches with a purchase, as well as a free chocolate malt shake with a purchase.

Great Deal on Knox Gelatin!

Right now you can get coupons for $4.00 off any Knox product. The small packs of Knox gelatin are priced at around $1.36 at Walmart. Here's the math:

In case you're wondering what you would do with Knox Gelatin (besides the obvious $2.64 "overage" you're getting towards your other grocery purchases!), here's a great recipe:

Pineapple Cheesecake Dessert

1/2 cup finely chopped pecans
3 Tbsp. flour
3 Tbsp. butter or margarine
1 envelope unflavored Gelatine
1/4 cup cold water
3 containers (8 oz. each) Cream Cheese Spread
1/2 cup sugar
1 can (20 oz.) crushed pineapple, drained, reserving 1/2 cup liquid
1 tub (8 oz.) Whipped Topping, thawed

Preheat oven to 350°F. Mix pecans, flour and butter; press firmly onto bottom of 13x9-inch baking dish. Bake 15 minutes. Cool completely.

Sprinkle gelatin over water in small saucepan; let stand 1 minute. Cook on low heat 5 minutes or until gelatin is completely dissolved, stirring occasionally.

Beat cream cheese and sugar in large bowl with electric mixer on medium speed until well blended. Gradually add gelatin and reserved pineapple liquid, beating until blended. Refrigerate until slightly thickened. Gently stir in pineapple and whipped topping; pour over crust.

Refrigerate several hours or overnight until firm. Store leftover dessert in refrigerator.
